The other day, in an independent café I shall not name, I perused the menu, unsure of what I wanted to drink. Eventually my eyes alighted on three enticing little words: Peanut Butter Smoothie (made, the menu said, with vegetable milk). I love peanut butter to the extent that I could reasonably call myself a connoisseur, and will happy eat it at any given opportunity. So it was with great pleasure and anticipation that I ordered it and sat down to await my treat.

Imagine my disappointment when I received what can only be described as a watery mess. The poor thing had been half-filled with slightly melted ice chips, causing the peanut butter to irretrievably separate, and the other, unidentifiable ingredients were so bland that I had the impression that I was drinking the paper label of the peanut butter jar rather than the thing itself.

I immediately turned to my coffee companion and promised that I would devise my own recipe for a peanut butter smoothie.

Later that day, I bought some oat milk and an extra jar of peanut butter (not willing to dip into my reserves for this experiment) and perused the internet for inspiration. I was rather amazed to find that not only was the addition of ice chips not an accident but that they are included on a number of recipes. There were also a number of other bizarre ingredients that do not even deserve mentioning.

Consequently, I realised that I would have to step in a write my own recipe for a Peanut Butter Smoothie and give it to you, dear reader, as a gift to the world.

Ingredients


  • 1 tbsp organic crunchy peanut butter
  • 1 organic, fair trade banana, sliced
  • 1 large medjool date, pitted and chopped
  • 1 tsp organic honey
  • Oat milk
Serves 1

Method


Put the banana, chopped date, peanut butter and honey into the beaker of a hand blender. Add the oat milk until all the ingredients are covered. Blend until the smoothie is thoroughly mixed, taking care to ensure all the honey and peanut butter have been picked up. Continue blending until the colour is even and there is a froth on the surface. Serve in a large whiskey tumbler.
